As with all of our suppliers, we choose our cheese producers with great care, looking only for businesses who put quality and tradition at the heart of what they do. One such is Formaggi Ciresa, a family business since 1927, based in Valsassina, a small mountain valley in the Alps. We have been sourcing cheese from Ciresa for almost 10 years and we’ve always been impressed with their passion for authenticity, great taste and preserving the traditions and flavours of the valley.

Their speciality is Taleggio, the well-known creamy cow’s milk cheese from Lombardia whose origins date back to the 10th century. In its characteristic square shape, this straw-coloured cheese has an aromatic fragrance and a buttery, sweet and sometimes tangy flavour. It’s really versatile, and just as good for cooking as on a cheeseboard – try our recipe for potatoes with Taleggio and rosemary and you’ll see what we mean. We love it!

    Gorgonzola Piccante is a really popular Italian blue cheese with a firm texture and made from cow's milk. It is thought to be one of the oldest blue cheeses in the world.

    Piccante in Italian means spicy and this version certainly has a nip to it.

    Quartirolo Lombardo has a fresh, sharp and slightly tangy taste.

    Pecorino Romano is one of the most famous of pecorinos and a great substitute for Parmigiano on pasta dishes and salads.  It has a hard texture which is ideal for grating and a mature flavour.

    A hard, mature cheese made with sheep's milk.

    Pecorino Sardo is also known as "Fiore Sardo" and comes from the island of Sardinia.

    A young pecorino with a mild flavour and semi-hard texture.

    Pecorino Fresco is wonderful on cheeseboards and salads.

    A hard, mature cheese made with sheep's milk.

    Pecorino Toscano is made in Tuscany; its mature, rich and slightly nutty flavour is delicious with honey.

    Smoked cheese - a really good alternative to mozzarella.

    Scamorza Affumicata is great in salads and for melting.
