Warm Potato and Artichoke Salad

wonderful salad as an
accompaniment to a
barbeque."


Serves two people

300g new potatoes
3 whole marinated artichokes*
1 garlic clove
1 tablespoon chopped flat leaf parsley
2 tablespoons extra virgin olive oil*
a splash of balsamic vinegar *
salt & pepper

1. Put the potatoes into a pan of cold salted water, bring to the boil and cook for about 15 minutes, or until the potatoes are cooked through.

2. Drain the potatoes and cut in half.

3. Roughly chop the artichokes and add to the potatoes.

4. Finely chop the garlic and add to the potatoes, along with the parsley.

5. Finally, dress with the olive oil and balsamic vinegar, season with salt and pepper and mix well.
