This lovely pasta is made with spelt flour, which comes from an ancient grain currently enjoying a revival in modern cuisine, largely due to its heath benefits. It is related to modern wheat but is significantly higher in protein, B complex vitamins and fibre, and has an intense nutty, wheaty flavour.

Try serving with a wonderful Porcini mushroom sauce. Suitable for vegetarians.
