Traditionally served in Emilia-Romagna with ragù, these beautiful tagliatelle are long, flat strips of pasta with a rough and porous texture, making them ideal for rich sauces. Suitable for vegetarians.

Try melting a little butter in a pan; add some chopped smoked salmon and the juice of half a lemon. After a few minutes add some double cream and a half a chopped apple. Cook for a few minutes then add to the cooked pasta.
