Paglia e Fieno means "Straw & Hay" with the yellow pasta being the straw and the green pasta, which gets its colour from the addition of spinach, being the Hay.

Long, flat strips of pasta, they are suited to full-bodied meat or creamy sauces. Suitable for vegetarians

Also an excellent partner to hearty game sauces such as Venison or Wild Boar.
