 The salsa rossa is made with red onions, red peppers and courgettes and so is a little sweeter that the salsa verde. Suitable for vegetarians.

Is used in much the same way as salsa verde, for example on bruschetta and as a side accompaniment. Perhaps a little more suited to roast meats and could even be used as a pasta sauce.
