"Pecorino in Hay"

Ageing sheep's cheese in hay is an ancient custom, utilizing the young hay gathered in May with its small flowers and highly herbaceous aroma.

The traditional "bite" of pecorino cheese is accented with the herbaceous, flowery notes infused by the hay.

An ideal way to enjoy this cheese is to cut it into chunks and serve on its own as a pre-dinner nibble with a glass of dry white wine.

San Patrignano is a wonderful community in Emilia Romagna dedicated to the fight against drugs. Since its inception in 1978 they have helped over 18000 young people with their problems. They do fantastic work but we have discovered they also make some fantastic cheeses (amongst other things).
