Their philosophy is to choose the best flour and the best eggs (from hens reared on just natural food).They follow the pasta-making traditions of the women of LANGA (their local area) passed from mother to daughter. L'Antica Madia pasta contains a very height percentage of eggs and is worked and finished by hand. Using a very slow drying process gives the pasta more fragrance and brings back memories from the past.
