This well known creamy cows' cheese from Lombardy has a slightly rosy crust and a recognisable square shape.

The cheese itself is straw-coloured with an aromatic fragrance. Its flavour is buttery, sweet and sometimes tangy.

It is delicious in salads, stirred through risottos, on a cheese board or even simply melted over bruschetta with some pan-fried mushrooms
