The name of this cheese comes from the grass eaten by the cows in autumn, when having returned to the plains from the alpine pastures, they eat the grass which has grown after the third cutting, named the "quartirolo".

It is a low fat cheese made with skimmed cow's milk and has a fresh, sharp and slightly tangy taste.

Best enjoyed with white wine, fresh figs and some Strawberry & Acacia Honey.
