Chestnut Stuffing

Sufficient for a 10lb turkey or serves 8-10 people


1 bulb fennel, trimmed and chopped small
4 shallots, finely chopped
4 tbsps extra virgin olive oil*
2-4 cloves garlic, finely chopped
400g Italian style sausage
200g pkt vacuum peeled chestnuts
2 tbsp freshly chopped sage
1tbsp freshly chopped thyme leaves
200g bread, diced
Grated zest 1 lemon
1 egg, beaten
salt and pepper

1) Heat a large frying pan, add the olive oil, then stir in the chopped fennel and shallots. Cook over a medium heat until soft.

2) Add the garlic and cook for 1 minute. Turn into a bowl and cool.

3) Squeeze the sausagemeat out of the skins and add to the bowl, roughly break up the chestnuts and add to the other ingredients. Use your hands to mix together. (You can always test the seasoning level by cooking a teaspoon of the mixture in a frying pan and tasting).

4) Either stuff into the cavity of the turkey or turn into an buttered, ovenproof dish and cook in the oven with the turkey for 45 minutes - 1 hour until golden brown on top.
